Put simply more visitors means a greater demand on casual and formal meal service in hotels, restaurants and conference centers. There has never been a better opportunity for people living in Region II to shift careers and secure their future while maintaining their established agreements and roles with the people who dependupon their income. That demand isn't only local. UN Tourism recorded 1.52 billion international tourist arrivals in 2025, up 4% year over year, and the World Travel & Tourism Council found travel and tourism already supports 366 million jobs worldwide, about one in nine jobs on the planet. The same 2026 industry data projects 91 million new travel and tourism jobs needed globally by 2035, against a potential shortfall of 43 million workers if hiring doesn't keep pace, and cruise lines, every one of which runs a full professional galley, carried a record 37.2 million passengers in 2025 with 38.3 million projected for 2026. Even in a mature market like the United States, the Bureau of Labor Statistics still projects 7% job growth for chefs and head cooks through 2034. Can you really become a Chef in 6 months while working Full time?
The Evening Intensive Culinary Diploma was built to answer this need. Classes run siz evenings a week, Monday through Saturday, 6pm to 10pm, totalling twenty four hours of lab and lecture every week at La Flamme Bleue's training kitchen in Tuguegarao Cagayan Valley. Instead of spreading the learning across 3 days a week for 10 months of daytime classes the Evening dormat accelerates the same 5 term curriculum so that you learn every foundation, technique and international cuisines in half the time when most people are at home doom scrolling.
If your schedule does not permit evening classes La Flamme Bleue still runs the standard 12 month Diploma in Culinary Arts on morning schedules (8am to 12 pm) and afternoons (1pm to 5pm) on alternating batches of either Monday/Wednesday/Friday or Tuesday/Thursday/Saturday. The evening format exists to serve the person who either has daytime responsibilities, does not want to give up their existing income or wants an expedited path to the Culinary industry or both!
What does a typical evening look like?
The first four months is a constant stream of theory and practical work that mirrors the technical and skill building rythm of the 12 month Diploma, the only difference being that one term equals one month. Starting with the basics of knife skills and progressing through Mise En Place and stocks and sauces foundations, moving into protein fabrication, plating and advanced Culinary techniques. Terms 1 through 4 follow the same progression with the added benefit of higher weekly frequency which increases the speed and retention of muscle memory and recall. 24 hours a week in four months is a close approximation to the conditions you will experience when you get to your On the Job Training. The Industry placement (Term 5) remains structured the same, doing 800 hours of live service in our partner establishments like Michelin Guide listed Gordon Ramsay Bar & Grill across the last 2 months of the program. This is where your technical competancy is turned into technical proficiency and is evidenced by the now 8 out of 21 alumni that have been hired by our Tier 1 OJT partners in 2026 many before they even graduated. It is worth noting that the OJT component happens during regular business hours so at this point you need to make a decision based on your goals if you want to obtain the qualification only or the qualification and the experience. Also without the work placement you will not be eligible to get the Australian Certificate III in Commercial Cookery.

How much does the 6 months cost vs the 12 month
The Evening Intensive Diploma totals ₱400,000: a ₱10,000 reservation fee that is credited toward tuition, ₱57,000 enrollment, and ₱333,000 tuition payable in three installments. That is a real premium compared to the 12 month Diploma however it buys two specific advantages; One, the same qualification in half the time and two, for working adults at least 4 months of maintaining your income and no lost momentum something that people with families and responsibilities cannot afford to lose.
