It is part of the school's 7th anniversary celebrations, and the prize structure reflects the scale of the event.

What Is Pansit Wars 2026?

Pansit Wars 2026 is a one-dish cooking competition where each participant works individually at their own station for 30 minutes, producing two plates of pansit: one for photography, one for tasting by the judging panel. A printed recipe with detailed ingredient costing must be submitted at judging. The competition is not divided into eliminations or rounds. All 72 participants across the two days compete against each other, and four placings are awarded across the full field.


The format is built to reward technique rather than scale. Thirty minutes is enough time to plan, execute, and plate one carefully constructed dish, and not enough time to mask weak knife work or unbalanced seasoning. This is a competition where cooks who have spent time learning fundamentals will have a clear advantage.

Why Pansit, and Why Cagayan Flavors?

Pansit is one of the most regionally varied dishes in Filipino cooking, and few places are richer in it than Tuguegarao. The city is home to three local noodle specialties. Pansit batil patung is the one most identified with Tuguegarao itself, built from miki noodles, ground carabao meat and pork liver, bean sprouts and vegetables, finished with a poached egg and crispy chicharon, with a bowl of egg-drop broth served on the side to pour over as you eat. Pansit Cabagan, which originated in nearby Cabagan, Isabela and uses boiled quail eggs with a saucier finish, has been adopted into Tuguegarao's panciterias so thoroughly that a local fusion of the two now exists. And sinanta, the oldest of the three, mixes miki and sotanghon noodles with pork, chicken, and clam and is traditionally served at celebrations.

This depth is exactly what "Celebrating Flavors of Cagayan" invites competitors to draw on. Entries can reach for local carabao or longganisa, vegetables from highland Cagayan farms, regional seafood from coastal towns like Aparri, or the techniques that define northern Luzon cooking. Entries are expected to be unique, creative, and innovative, so direct reproductions of existing recipes will lose points against original interpretations.

How Will the Dishes Be Judged?


The judging panel is led by Chef Martin Bower, Academic Director at La Flamme Bleue. Chef Martin trained in the United Kingdom and brought kitchen experience from Marriott, Mercure, and Swissotel properties before moving into culinary education in the Philippines. A few rules carry equal weight to the criteria above. Modern cooking techniques must be incorporated into the dish. Every component on the plate must be edible. When and Where Is the Competition Held?


The competition takes place at the La Flamme Bleue Center for Culinary Arts campus in Tuguegarao City. Three batches are scheduled each day, with 12 cooks competing per batch.

La Flamme Bleue Tuguegarao is a TESDA-accredited culinary school that has trained 390 graduates across 25 batches since opening in 2019.
